Ingredients

  • 1/2 head of cabbage (thinly sliced)

  • 2 medium carrots (shaved)

  • 1 white onion (thinly sliced)

  • 1 jalapeño (thinly sliced)

  • 3 tablespoons of white vinegar

  • 2 teaspoons of sugar

  • 1 teaspoon of salt

  • 1 teaspoon of Mexican oregano (optional)

Directions

  • Combine the ingredients and mix well

Notes

  • You can make various substitutions or additions. Try one or more of the following:

    – Red cabbage instead of green cabbage
    – Serrano pepper instead of jalapeño
    – Apple cider vinegar instead of white vinegar
    – Add 1 clove of garlic (minced)
    – Add 2 tablespoons of oil
    – Add 1/2 teaspoon of ground black pepper
  • The flavor will develop the longer the curtido ferments, so make it the night before serving.
